Tradito A La Clarita

  • 1+1/4 kg sole fillets, washed
  • 1+1/2 c olive oil
  • 100 gr white vinegar
  • 1 t crushed garlic
  • 2 T Lime juice
  • 1/2 t salt
  • 1 t honey
  • 1 T mustard

Create vinaigrette by blending the oil, salt, lime juice, vinegar, honey, mustard and garlic; refrigerate. Then cut the fresh fish in very thin slices, mix with the sauce and let it stand for 30 minutes. Arrange on a serving dish; pour more vinaigrette and garnish with chopped red and yellow peppers, spring onions and chives. If you like, add also some red hot pepper sauce and 2T of Guasacaca.
