Carrot-Orange MuffinsCarrot-Orange Muffins

Ingredients

  • 1 cup of wholesome flour
  • 10 gr of Baking powder, almost a tablespoon
  • 3 eggs
  • 3/4 cup of brown sugar
  • 1 big orange's zest, grated
  • 2 cups of finely grated carrots
  • A pinch of salt (1/8 teaspoon salt)
  • 1 teaspoon of ground cinnamon
  • 1/2 a cup of vegetable oil
  • 1/4 cup of walnuts

Instructions

  • Beat the eggs with the sugar.
  • Add the oil, blend.
  • Add the carrots, the walnuts, the zest of orange and the cinnamon.
  • Mix with the flour, the baking powder and the salt. Mix very well.
  • Pre-heat the oven at 160 degrees C.
  • Pour the mixture into the muffin cups, paper or silicon.
  • Bake for around 20-30 minutes.
  • Remove from the oven and let them cool for 10-15 minutes.
  • Enjoy these deli muffins! First, the excellent aroma will start invading your home evenbefore they are ready.

Mini Choco Heart Cakes

Mini Choco Heart Cakes

These yummy, soft and warm chocolate cakes have 100% Clarita's Way "Double Enjoyment" seal, especially thanks to the high fiber content of the dried prunes in the recipe. They also have very little flour, sugar and fat and we use the best quality of bitter chocolate. This cake is a real treat for people with dietary restrictions. Enjoy!

Ingredients

  • 3/4 cup wholesome flour
  • 3/4 cup brown sugar
  • 4 eggs whites
  • 2 whole eggs
  • 1 cup dried prune puree*
  • 1 teaspoon vanilla essence
  • 1/8 teaspoon salt
  • 10 gr baking powder
  • 50 gr vegetable oil
  • 100 gr bitter chocolate (we use the Lindt one, either 85% or 99% cacao)
  • 3 tablespoons cocoa powder
  • 1 cup walnuts, coarsely chopped

Instructions

Pre-heat the oven, so that we gain time. You can grease your heart shaped pans or use muffin cups instead.

  • In a bowl mix the egg whites with the sugar and beat with the electric mixer, to create a fluffy cream. Beat for 3 minutes, then add the whole eggs and continue beating for 5 more minutes.
  • While still beating, add a pinch of salt, the vanilla, the melted chocolate and the prunes puree. Continue beating until you create a very creamy consistence.
  • Add the flour, the baking powder, the cocoa and the walnut pieces. Mix very well with a fork or the electric mixer at a very low speed.
  • Pour the batter into the prepared pans or muffins cups and bake for 25 minutes at a temperature of 160 C.
  • Remove from the oven and while still warm, pour the 1/2 cup of warm milk on top of them. Allow it to absorb the liquids for a few minutes. Enjoy!

For the prune puree

Cook one cup of dried prunes in half a cup of water. Let them boil and cook for 10 minutes. Let it cool. Remove the pits, if any and pour the water and the prunes in a blender and make the puree.


 Strawberries in Strawberry Sauce

Strawberries in Strawberry Sauce

To auce prepare this one, get one kilo fresh strawberries. Wash them and even brush them very carefully. Slice the mand divide the amount in half. Half will be used to make the sauce and the other half (the nicer looking ones) will be sliced and placed in a big glass bowl. Make the sauce by blending the strawberries with very little water, some lemon juice and 1/2 t of honey or brown sugar. Pour this sauce over the remaining sliced strawberries and eat immediately or keep covered in the refrigerator. You can serve this dessert either plain, or with some yogurt or with a "soy creme" (vanilla flavored soy milk mixed with yogurt). Decorate with fresh mint leaves if you like.

Made from whatever fresh fruit is available, plus almonds, hazelnuts, pistachios, dried apricots, prunes and/or figs (cut into very little pieces). Make a creamy sauce of yogurt, orange juice and a pinch of cinnamon.
