Chicken Burgers

Chicken Burgers

  • 200 gr ground chicken meat
  • 2 T onion puree
  • 1 T green onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 t dried rosemary leaves, crushed
  • ½ t sweet red pepper flakes
  • ½ t salt
  • ½ t white pepper

Combine ingredients well, and fry in Teflon skillet, 4-5 minutes on each side. Serve as above.



Falafel Burgers

Falafel Burgers

  • 4 c cooked chickpeas (garbanzo)
  • 4 garlic cloves
  • 1+1/2 t ground cumin
  • 2/3 c parsley, chopped
  • 1 c chopped red onion
  • 1/ c chopped spring onion
  • 2 T lemon juice
  • 1 t ground coriander
  • 1/2 t salt
  • 1 c dry dark bread crumbs
  • 2 t canola oil

The way to cook the garbanzos when preparing falafel is different from the usual way. In this case we don't want to over cook the chickpeas, so soak them in water with some soda bicarbonate for 2 hours and then drain, rinse and cook them only for 1/2 an hour. This way they don't become mushy, and we have a better texture when preparing the patties.

In a food processor or blender, make a paste of onions, garlic, parsley, lemon juice, garbanzos and spices. Blend until it becomes a smooth paste.Shape in to patties and refrigerate overnight, at least 10 hours. Cook the patties in a Teflon skillet, 5 minutes each side on a high heat. Then reduce the heat and cook for another 5 minutes covered.
To assemble falafel burgers, either make them like ordinary hamburger sandwiches (pictured):

  • a whole some bun of your preference, +salad and tahini sauce as a topping, or
  • a wholesome pita pocket, split and filled with salad, some falafel and topped with hummus and tahini sauce. 

Variation: add some spicy red pepper sauce and pickles (cucumber and cabbage). Or just by themselves with some salad and tahini sauce (no bread at all).


Fish Sandwich

Fish Sandwich

  • 1+1/2 c cooked fresh salmon, sea bass or tuna
  • 3 T fresh lemon juiceSalt and pepper to taste
  • 3 T light mayo, avocado or guacamole spread
  • 1 C chopped chives or spring onions

Puree everything in the food processor. You can use this as a center of a salad, as a dip, as a filing for a sandwich, as a filling for a tomato, for a snack, as a light lunch summer lunch, for a picnic, on the boat: the possibilities are endless!

NOTE: If you are using fresh salmon, then cook it by steaming it. Remove any skin, bones and extra fat. Chop it and then mix it in the food processor with the other ingredients. Tuna or any white fish is best grilled or pan fried, rather than steamed
