Ingredients

  • 6-7 artichoke hearts
  • 4 large bunches of fresh basil + extra leaves for decoration
  • 4 tablespoons of olive oil
  • 5-6 garlic cloves
  • 1/2 teaspoon of salt (more or less, according to your taste)
  • 1/2 cup of cold water
  • 1/2 cup of warm water for cooking the artichokes

Instructions

  • Prepare the green sauce with the fresh basil, the olive oil, the salt, 1/2 cup cold water and the garlic, mixing them by the electric blender.
  • Place the artichokes in a large saucepan, one next to another, and add half a cup of water together with one cup of the green sauce. Keep the remaining sauce for later use.
  • Cook for 45 minutes in a low fire.
  • To serve, garnish with the remaining sauce and decorate with fresh basil leaves

Pinerapple Stir-Fried Rice

Pinerapple Stir-Fried Rice

This recipe is so much healthier and lighter than typical Chinese fried rice. It is a meal by itself.

Ingredients

  • 1 large pineapple
  • 2 cups of cooked brown rice
  • 100 gr of chicken breast, cooked
  • 1 red bell pepper, seeds removed, and cut in small dices
  • 2 small green peppers, seeds removed, and diced
  • 1/2 a cup of cooked green peas
  • 1/2 a tablespoon of shredded fresh ginger
  • 1 tablespoon of sodium reduced soy sauce
  • 2 teaspoons of curry powder
  • 1 tablespoon of sesame oil
  • 1 bunch of green onion

Instructions

  • Scrub the pineapple; cut the top, cut and remove the flesh without breaking the skin. Dice the fruit.
  • In a wok, heat a little oil and stir-fry the shallots, the ginger, half of the red pepper, the rice, the soy sauce, and the curry powder for about 8 minutes.
  • Add the diced pineapple; mix well, and fill the pineapple shell with this mixture.
  • Sprinkle with the green peas, and the remaining dices of the red pepper.

Variation

For a vegetarian choice, omit the chicken, and add chopped cashew nuts or stirfried TOFU instead
