This different, delicious and rich Rocket-Walnut Pesto sauce is very easy to prepare, (PRACTICLARITY!). It blends very well with wholesome fettuccini or spaghetti. Also it can be used over grilled vegetables or as a salad dressing. This pesto keeps very well in the refrigerator for about a week. That's why; you can make extra sauce, and keep it handy. This is an alternative version of the traditional Italian Pesto sauce made with BASIL. It is dairy-free!

Ingredients

  • 2 large bunches of fresh rockets, washed, cleaned, and stems removed
  • 4 garlic cloves
  • 1 cup of chopped walnuts
  • 1/2 a cup of extra virgin olive oil
  • Salt and pepper to taste

Blend the walnuts, the salt and the crushed garlic; add the rockets, and blend to form a puree (you might need to add a few drops of water); then slowly add the olive oil. Add freshly ground black pepper.

Extras

  • FOR THE EXTRA GREEN color and the enrichment of vitamins and iron, please add ½ a cup of fresh spinach leaves.
  • For an EXTRA indulgence, add some freshly grated parmesan cheese

Clarita's Way natural Ketchup

Ingredients

  • 10-12 cups of diced and peeled tomatoes and their juice
  • 1 cup of chopped red onion
  • 1/2 a cup of dry red wine
  • 6 tablespoons brown sugar
  • 1/2 sweet red pepper (seeds removed), peeled and diced
  • 50 grams of chopped celery
  • 2 tablespoons of tomato paste
  • 2 tablespoons red wine vinegar
  • 1 tablespoon of pomegranate syrup, (it gives this sweet and sour taste to enhance the flavor even more)
  • 1 teaspoon of apple vinegar
  • 2 teaspoons chopped garlic
  • 11/2 teaspoon ground cumin
  • 3 cloves
  • 1 bay leaf

Instructions

  • Combine all the ingredients in a heavy, large saucepan, and cook over high heat to boil.
  • Reduce to medium heat and simmer for about 30 minutes until reduced to about 3 cups.
  • Discard the celery, bay leaf and the cloves. Puree the mixture in the blender until smooth (work in batches). Season it with salt and pepper according to your taste.
  • Let it cool completely before refrigeration.
