Colorful Spinach Salad

Ingredients

  • 250 gr of fresh, young spinach leaves
  • 1/4 cup of thin-sliced white mushrooms
  • 1 big, purple onion
  • 1 cup of thin-sliced strawberries
  • 1/2 cup of crushed walnuts

For the sauce

  • 100 gr of Extra Virgin or other olive oil
  • 1/4 cup of Balsamic vinegar
  • 1 teaspoon of salt
  • 1/2 a tablespoon of honey or raw brown sugar

For the sauce note

  • Mix all the ingredients in an electric blender (one of the best investments ever), or whisk them by hand.

Instructions

  • Wash the spinach leaves very well. Remove off the roots, reserving them for the "Turkish Style Spinach Roots cooked in Olive oil".
  • Spin the leaves in the lettuce-drying gadget; or dry them between paper towels.
  • Wash, peel, and slice the white mushrooms into thin slices.
  • Cut the onion in thin rings, wash with cold water, lightly salt, and let stand for 5 minutes, then rinse again and dry with paper towels.
  • Mix the greens with other ingredients in a salad bowl; add the sauce, mix well. Add the strawberries and enjoy this beautiful mixture of colors first visually, then with the taste.

Cole Slaw Salad

Cole Slaw Salad

Ingredients

  • 3 cups of finely cut white cabbage, 300 gr
  • 1/2 a cup of grated carrots, 50 gr
  • 1/2 a cup of finely cut white onions, 50 gr
  • 1/2 a teaspoon of salt and a pinch of black pepper

For the dressing

  • 2 tablespoons of olive oil
  • 1 tablespoon of vinegar
  • 1/2 a teaspoon of salt and a pinch of black pepper
  • 1/2 a tablespoon of honey

Instructions

  • Put the grated carrots, the finely cut white cabbage, and the onions in a bowl and add the salt. Mix them well and even rub them well with your hands for 2-3 minutes.
  • Make the dressing and pour it over the cabbage-carrot-onion mixture. Toss well. Taste and adjust for some salt or more vinegar or sweetness.
  • Let it stand in the bowl for 5-10 minutes so that it will become more juicy and tasty.
  • Serve and enjoy!
  • You can keep it in the fridge for one day

Ingredients

  • 1/2 a kg of small, red radishes
  • 1 cup of low fat yogurt
  • 1 teaspoon of salt
  • 1 tablespoon of chopped dill
  • 2 tablespoons of fresh green onions, especially the green parts
  • 2 garlic cloves
  • 2 big red radishes for decoration (as seen in the picture)

Instructions

  • Cut the small, washed radishes, and make them into thin slices.
  • Mix the radish slices with all the other ingredients in a bowl. Toss them well. Then, try and adjust the dish for salt and pepper in accordance with your taste.
  • Get ready to serve them in a small bowl. If you want to create a more special look, then cut the big red radishes in two halves. Empty the center of the radish to create a space for the small radish salad. Enjoy!
