Pumpkin Soup

Pumpkin Soup

Ultra delicious, rich yet light, loved by everyone!

Ingredients

  • 1/2 a kg of pumpkin, peeled and cut in chunks
  • 1 tablespoon of olive oil
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of red crushed pepper, mildly spicy
  • 1 teaspoon of fresh ginger, cut in thin strips for decoration; and stir fried in little olive oil till it gets a brownish color
  • 1 tablespoon of chopped leeks, for decoration; and stir fried for 2 minutes
  • 5 cups water

Instructions

  • Rub the pumpkin pieces with some of the olive oil, a bit of the sea salt and a little of the red crushed pepper.
  • Place the pumpkin pieces in a Pyrex container, or an oven tray. Roast uncovered at a temperature 170 degrees C for 30 minutes, until it softens.
  • Remove from the oven and put in a pan. Add 5 cups of warm water, let it cook for 10 minutes.
  • Add the salt. Let it cool a bit and transfer to the electric mixer to blend and create a creamy texture.
  • Try and adjust. Add extra red pepper if you like.
  • Sauté the ginger sticks in a small pan with just enough olive oil, until they are a bit brownish.
  • In another pan, sauté the chopped leeks, until a bit brownish.
  • Pour into the serving soup plate and decorate with the ginger strips and the leeks. Enjoy!

Hints

If you wish more creamy texture, once the soup is ready, before you add the ginger, add a tiny bit of butter and of milk, and stir well until it is ready to serve.


The Red Soup

The Red Soup

Ingredients

  • 1 large, white onion, chopped
  • 3 garlic cloves, crushed
  • 3/4 cup of chopped celery
  • 2 tablespoons of chopped carrot
  • 1/2 cup of red sweet peppers, seeded and diced
  • Salt and black pepper to taste
  • 1/2 a teaspoon of brown sugar
  • 1 teaspoon of fresh basil leaves
  • 1 teaspoon of dry mixed Provence herbs (thyme, oregano, sage)
  • 10 cups of tomatoes, peeled and diced
  • 3 cups of water

Instructions

  • Sauté the onions in a non-adhesive pan, until they become soft and pink.
  • Add the garlic and stir it for 5 minutes. Add the red pepper and continue stirring for a few more minutes.
  • Add the tomatoes, the carrots, the celery, the salt, the pepper, and the herbs.
  • Add the water, and cook everything for 10 minutes. Let it cool.
  • Remove the bay leaves and the cloves, and blend in the machine, taste and adjust.

Green Pea Soup Sealed! (Take it out the World Sealed)

Ingredients

  • 500 gr of fresh green peas, (or frozen)
  • 1 lt of water
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • A pinch of black pepper

Instructions

  • Cook everything in a pan for 30 minutes. Blend in the mixer, and put them again in the pan. Let it boil.
  • Remove from the heat and serve.

Suggestions

  • You can add a little bit of butter and/or parmesan cheese according to your taste.
  • You can add a few dill leaves while it is cooking, for extra flavor; however, you must remove them just before blending the peas in the machine.
