Yes, you have read it correctly! The potato wedges you see here have not been fried, but roasted in the oven, instead. The recipe is as follows For 3 medium sized potatoes, you will need 1 tablespoon of olive oil, a bit of sea salt, and a pinch of black and red pepper powder.
As you can see in the picture, the potatoes were cut with a
special serrated (zig zag!) knife, which you can find at cutlery stores. Hint Dip

Variations: red onions instead of white onion; add fresh
cilantro, hot pepper flakes; add 4 jalapeno or other fresh chili, seeded and
chopped; add 1 large tomato, peeled, seeded and chopped.
In a small bowl or electric blender, mix the sesame paste with the water; then add the lemon juice, salt and garlic.
Options: you can also add some parsley while blending, and extra chopped parsley to decorate.
