Cacik Cups

Ingredients

For the filling

  • 2 cups of low fat, organic yoghurt
  • 1 large cucumber, de-seeded if necessary
  • 1 garlic clove
  • 1 tablespoon of fresh dill
  • Salt and black pepper
  • 50 gr of low fat white cheese (Feta cheese), crumbled
  • A pinch of salt

To assemble the Cucumber cups

  • Big fat cucumbers
  • 1 tablespoon of crushed walnuts

Instructions

  • Crush the garlic and mix into the yoghurt. If your cucumber is smooth and the peel is sweet, just grate it and add to the yoghurtor, if you prefer, remove the strips of peel before grating.
  • Add the cheese, the dill, and the walnuts. Taste and adjust for salt.
  • Cut the cucumbers in halves or even in 3 pieces, if they are very big.
  • Empty the inside and add it to the yoghurt mixture.
  • Fill your cucumber cups with the mixture

Yes, you have read it correctly! The potato wedges you see here have not been fried, but roasted in the oven, instead. The recipe is as follows For 3 medium sized potatoes, you will need 1 tablespoon of olive oil, a bit of sea salt, and a pinch of black and red pepper powder.

  • Wash and brush the potatoes. Don't remove the skin please!
  • Cut the potatoes in wedges, and rub them with the mixture of the oil, the salt, and the peppers.
  • Place them in an oven tray, and roast them at a temperature of 180 degrees C for 45 minutes. Enjoy them immediately!

Note

As you can see in the picture, the potatoes were cut with a special serrated (zig zag!) knife, which you can find at cutlery stores. Hint Dip your potato wedges into CLARITA'S WAY home-made NATURAL KETCHUP, to increase the level of your pleasure! Enjoy


Guacamole

  • 4 Avocado
  • Juice of 2 lemons
  • Salt and pepper
  • 1 T white onion, very finely cut
  • 2 T spring onions

Smash the avocados with a fork and add lemon juice, salt and onions, or blend everything in the machine. (This will give you a completely different texture, like a mousse or smooth puree) You choose!

Variations: red onions instead of white onion; add fresh cilantro, hot pepper flakes; add 4 jalapeno or other fresh chili, seeded and chopped; add 1 large tomato, peeled, seeded and chopped.


 

Fava Tip

Tahini Dip

  • ½ c sesame paste (tahin)
  • ¼ c lemon juice
  • ¼ c water
  • 1 t crushed garlic
  • ¼ t salt

In a small bowl or electric blender, mix the sesame paste with the water; then add the lemon juice, salt and garlic.

Options: you can also add some parsley while blending, and extra chopped parsley to decorate.
